
Miso soup is a gentle way to start the day or begin a meal. The broth is a simple base that can be served as-is or with added vegetables and protein, for a hearty meal.
INGREDIENTS:
- 1 cup water
- 1 tsp. crushed seaweed (kombu)
- 1 Tbsp. miso
- 2 tsp. lacto fermented garlic scapes
INSTRUCTIONS:
- Add seaweed to water and bring to a gentle boil. Remove from heat and let sit for 3-5 minutes.
- Remove seaweed. Discarded seaweed can be consumed or added to compost.
- Mix miso with a small amount of cool water until it forms a smooth paste. Add miso to the seaweed broth and stir.
- Top with green onions or garlic scapes and serve immediately.
