Nice starter w great flavor

We were not sure if we could keep this at the right temperature to fully firm up, but it thickened nicely. I have been eating it for a couple weeks and it is still tasty.

Do you heat up to 85 deg for raw cream? Or higher, like 100-110? I want to make sure it thickens.

Hi Cheree! The temperature we recommend is 72-77°F for culturing. Heating the cream to higher temperatures, such as 100-110°F is not necessary for crème fraîche making with this specific starter culture. Excessive heat can potentially harm the beneficial bacteria and hinder the fermentation process. It's crucial to carefully follow the directions included with the starter culture and keep the suggested culturing temperature within the designated range in order to guarantee appropriate thickening.

Hello Clint! Our Creme Fraiche Starter is a direct-set or single-use starter which means that each packet only makes one batch of creme fraiche and a portion of the batch cannot be saved to make future batches!

If I use organic milk but I don't see this particular bacterium starter culture is labeled "Organic" or if bacterium starters can be labeled organic in the first place, would my overall creme fraiche be considered "organic", let alone can I say it is?

I see someone already asked about using raw cream. However, the raw milk I have is from a Jersey and is very high in fat. Would the cream from it be suitable for creme fraîche or would pasteurized still be better?

Hello! We always recommend using pasteurized milk with our products. Raw milk comes with its own set of bacteria, and if your milk is a few days old or wasn't chilled down quickly enough, that bacterial count can be high. This means the bacteria in the milk may compete with the culture and not activate correctly!

Hi Lisa, I wouldn't recommend using raw milk with our creme fraiche starter. Raw milk doesn't have a high enough fat content that the creme fraiche starter needs to activate correctly. I'd recommend using half and half like the instructions suggest for best success!
