I bought this culture a few years ago and my goat cheese failed. As a newbie I assumed I did something wrong and was so disappointed, but then I was reading the reviews and a long-time user said his new batch of culture had failed and mentioned the date and lot and sure enough that was the same one I had. So after trying the lemon juice method to so-so results, I took a chance and bought a new culture this year. It works spectacularly! I use unpasteurized goat milk from a local farmer so I "flash" pasteurize it first (160 degrees for a minute) then watch it carefully in an ice bath until it reaches 86 degrees. From there on out I just follow the directions. From a gallon of goat milk I got 2 lbs 4 ounces last time and 2 lbs 8 ounces this time. I add a few tablespoons of heavy cream and about a half teaspoon of cheese salt. It freezes beautifully to tide us over until the goats start giving milk in the spring. I get a gallon of goat milk for $10.75 and the culture with free shipping for $10.99 (divided by 4 = $2.75) so that's less than $14 for all that cheese. To get good quality goat cheese around here it is $8-9.00 for 5 ounces--whenever anyone tells me they don't like goat cheese I say it's because you've been eating BAD goat cheese. This is a deal if you can find good quality goat milk!
The taste of yogurt is good but tried different culture I got better result.
