Getting Started:

  • Begin with your clean glass jar.
  • Mix your starter using the recommended ratio, which typically ranges from 1:2:2 to 1:3:3 for the starter, flour, and water respectively.
  • Incorporate the ingredients thoroughly, utilizing your silicone spatula to sweep any remnants from the sides to the base of the jar.
  • Drape your jar with the cloth cover, positioning it in a stable location with a consistent temperature range of 70F to 85F. Your handy thermometer band will assist in monitoring this.
  • Maintain a feeding regimen every 12 hours, with a ratio of 1:2:2 or 1:3:3 to starter, water, and flour The feeding day/level band serves as a visual reminder of feeding times and starter levels.
  • Once your starter is bubbly and expanded, it's ready for baking. After using the required amount for your recipe, remember to feed the leftover starter and resume its 12-hour feeding cycle.
  • For longer storage intervals, seal the jar using the aluminum lid before refrigerating, ensuring a mold-free environment for your starter.
