There really should be more detailed instructions. For beginners this process can be very scary and unknown. I have in the past try making farmers cheese twice and it hasn’t succeeded so I am trying your cultures. I’m feeling a bit lost. For example, I’m going to use two starter packets, but you guys don’t say anything about the rennet. Even if a type of cheese does not need Rennett you should indicate that on the instructions. If rennett is included in the bag, we should have directions on how to use or how not to use it. That would be super helpful thank you!

I bought a package of the Mesophilic Cheese starter in anticipation of making ricotta for the first time from leftover mozzarella whey. But the recipe I have just says to add "4 ounces of prepared mesophilic starter". How do I "prepare" the starter in the package? And how do I get up to 4 ounces from a packet that weighs something like 0.015 oz? Thanks, Angela

Thanks for reaching out, Angela! To prepare the mesophilic cheese starter, dissolve the packet in 1-2 cups of milk (this will activate the cultures). Once it's fully dissolved and the milk has thickened, you’ll have a prepared starter culture. From there, you can measure out 4 ounces of this prepared starter to use in your ricotta recipe. Enjoy making your cheese!
