INGREDIENTS:
- 1 lb. parmesan or other aged low-moisture cheese, grated coarsely
- Fresh or dry herbs: oregano, rosemary, or thyme (optional)
- Fresh ground black pepper (optional)
INSTRUCTIONS:
- Preheat oven to 400°F.
- Line a cooking sheet with parchment paper or a silicone baking sheet.
- Place cheese in piles about 2 inches in diameter, allowing about 1 inch space between them.
- If desired, sprinkle a small amount of herbs and black pepper on top.
- Place in heated oven and watch carefully. Remove from oven once crackers start to turn a gold color, about 3-5 minutes.
- The crackers will be flexible while still hot. To make a cup or basket shape, drape over a glass or bottle to cool and firm up.
