HOW TO STORE YOUR LIVE STARTER CULTURE
• Store the starter culture in the refrigerator until you’re ready to activate it
• Use the starter culture by the date on the bag
SUPPLIES YOU'LL NEED
Ingredients
• Bottled spring water (free from chlorine and fluoride)
• Tea bags or loose black tea

Equipment
• 1-quart glass jar
• Container that can hold up to 1 gallon (for larger batches only)
• Thermometer
• Coffee filter or tight-weave cloth
• Rubber band
• Plastic mesh or stainless steel mesh strainer
