Skyr culture technically makes an Icelandic cheese, although it's normally eaten with berries, jam, or other sweet toppings. This is how Skyr ended up in the yogurt aisle in the United States! Our Heirloom Skyr cultures are typically made with skim milk but the rennet helps create a thick, creamy consistency.

  • HOW TO STORE YOUR STARTER CULTURE
    Store the starter culture in your refrigerator until you’re ready to activate it. Use the starter culture by the date on the bag.

  • Pasteurized Whole Milk (Not UHT/Ultra-Pasteurized)
  • ¼ Rennet Tablet Dissolved in ¼ Cup Cold Water

  • Equipment
  • 2 Quart Size Glass Jar
  • Stainless Steel Pot that can hold a little over 2 Quarts with Lid (avoid aluminum)
  • Coffee Filter or Butter Muslin
  • Rubber Band
  • Thermometer
  • Stainless steel / silicone / wood spoon or spatula
