It took me three hours to get the skins of the beans. I'm just now waiting for them to get to room temp so I can culture them. I don't think I would ever do this again. Waaay too much hassle.
I used my instantpot to make this - ive heard that tempeh can be tricky, but it worked perfectly! On mine, the “low” yogurt setting was just right, and I put my black beans mixed with the starter culture on a ... I’m not sure the term exactly, but a disposable steamer liner, it’s like a super thin nonwoven fabric that comes in maybe 15 or 24 packs. No sticking at all. I did some in a baggie as well, lots of holes poked in, and it seemed to grow even a little faster than the “open-air” beans. So easy. I really thought it would be harder. Turned out delicious, too - I smoked it then vacuum-packed it with maple, salt, and black pepper to use as “bacon”.
My first time making tempeh from black beans. Make sure to remove all moisture from beans before adding starter. Only 1 of my 3 batched worked.
