In this version, the mayonnaise is replaced with additional cultured dairy. With the right ratio of acidity, blue cheese, and seasonings, you won’t even miss the mayonnaise!

INGREDIENTS:

  • 1 cup sour cream
  • 1/2 cup heavy cream
  • 1/2 cup buttermilk
  • 3/4 tsp. fine-grain sea salt
  • 1/2 tsp. black pepper
  • 4 tsp. red wine vinegar
  • 5-ounces blue cheese


INSTRUCTIONS:

  1. Combine sour cream, heavy cream, buttermilk, salt, pepper, and vinegar in blender. Blend a few seconds, until smooth.
  2. Crumble in blue cheese and blend again.
  3. Chill several hours in refrigerator before serving.
