Most blue cheese dressing recipes contain a combination of cultured dairy and mayonnaise as the base. To that you add blue cheese, some acidity, salt, and pepper. In this version, the mayonnaise is replaced with additional cultured dairy. With the right ratio of acidity, blue cheese, and seasonings, you won’t even miss the mayonnaise!
- 1 cup sour cream
- 1/2 cup heavy cream
- 1/2 cup buttermilk
- 3/4 tsp. fine-grain sea salt
- 1/2 tsp. black pepper
- 4 tsp. red wine vinegar
- 5-ounces blue cheese
- Combine sour cream, heavy cream, buttermilk, salt, pepper, and vinegar in blender. Blend a few seconds, until smooth.
- Crumble in blue cheese and blend again.
- Chill several hours in refrigerator before serving.
